I am the type of person to get bored when it comes to breakfasts! I would go a week eating oatmeal and then get bored with its lack of variety (example: each bite has every ingredient in it). My mom would tease me when I would eat dinners for breakfast! Now that I think about it, it was probably a very smart idea on my part!
Enter “Breakfast Bowls”. These are my take on the new “lunch bowl” trend. Who knows, maybe breakfast bowls do already exist and I am behind!
Here is what I do:
On Monday mornings (I don’t work regular hours so this is okay for me, but maybe the 9-5ers will have to do this on Sunday) I do the prep:
Prep:
1. Roast sweet potatoes:
This is the part that I’m scared of because here is where I am supposed to put all of the details. I usually wing everything. I’ll give you as much info here as I can!
Take 1 or 2 sweet potatoes (2 just lasted me 3 days but I’m almost positive that someone else in my house ate some!). Cut the sweet potatoes into cubes, toss in paprika, salt, pepper and coconut oil(you need to melt it in the microwave or on the stove). Place in the oven at 400 degrees fahrenheit. Every oven is different so keep an eye on them! You can cook them until they are as brown as you would like. I recommend that you flip them midway through.
2. Make a salsa!
These are the ingredients that I used:
- 1 Tomato
- 1/4 red onion
- A few sprigs of cilantro (you can include the stems)
- Sesame seeds
- Olive Oil
- Salt
- Pepper
- 1/4 red pepper
Cut these ingredients up as small or as big as you would like! I like my pieces smaller so that I can taste more ingredients at the same time. Others prefer their pieces bigger! You are in your kitchen, this is your breakfast – do whatever makes your heart content!
Also, if you don’t like cilantro – don’t put it! Do you like parsley? Add that instead! Customize this recipe however you would like! If you don’t have any ideas on how to customize, ask me in the comments! I would be more than happy to brainstorm other ideas with you 🙂
3. Eggs
I put these in prep because you can cook eggs in advance! I like to use poached eggs in my breakfast bowls but you can also add whichever eggs you would like!
* fun tip: if you are poaching your eggs, you can reheat them super fast on the morning of! How do you reheat a poached egg? Place it in simmering water! Be careful though, your egg is already cooked so this won’t take very long!
Morning of
Now that you have done all of the prep, your mornings will be easier!
Here are your steps:
- Take all of the ingredients out of the fridge
-Sweet potato
-Salsa
-Egg(s)
-Avocado (if you leave it is in the fridge) - Heat up your sweet potato
- Cook or reheat your egg(s)
- Cut up your avocado
- Once your eggs are cooked and your sweet potato has been warmed, combine all your ingredients!
Voila, you have your breakfast bowl!
