Rustic mashed potatoes

I came up with this recipe today! Lately I have been making a sort of hash to go with my poached eggs for breakfast! I decided to do a sort of twist on that and mash the potatoes and then add some of the Cashew Cheese that I bought yesterday!

So, I guess you want to know more about this recipe! Well, it is Gluten Free & Dairy Free! 😀

Here are the ingredients:

  • Yellow potatoes (or whatever potatoes you want to use!)
  • Green onions
  • Clarified Butter
  • Salt
  • Pepper
  • Cashew cheese (you could also add “regular” cheese!)
  • Feel free to add whatever else you want! Just as an example, you can add red peppers, bacon, spinach, leeks, the list is limitless!

I am a super visual person so I decided to take pictures so that you would also be able to visualize what exactly you should be doing!

I find the tinier the ingredient is cut, the more you get to taste all of the ingredients that are in the dish at the same time! 🙂

Maybe my tastebuds were off but I couldn’t really taste the “blue cheese” too much. I should have tasted the potatoes before the “blue cheese” and after the “blue cheese” to see the difference!

I was super excited because I found gluten free, nitrate free, phosphate free sausages from a local supplier, Les Fermes Valenes. AND even better, they will be at a local Farmer’s Market once a week! Yes, they are more expensive compared to a pack of Costco sausages but I am at a point in my life where I don’t even care. What goes into our bodies is super important and I want to feed my body quality ingredients!

p.s. This dinner was delicious! If you are ever looking for a way to spice up your green beans, add some toasted sliced almonds! DELICIOUS!
